When you first install WooCommerce, it should automatically create the Shop, Cart, Checkout, and My Account pages for you. If you skip the wizard, the pages are missing, or you need to create those pages again, you can follow this guide: https://docs.woocommerce.com/document/woocommerce-pages/
WooCommerce currently offers various options for payment gateways for your site, and you are welcome to use multiple gateways for your site. Here is a list of Payment gateways:

If you’re overwhelmed with the options available, typically we recommend starting with the WooCommerce Payments gateway since it has no setup costs or monthly fees.

There is a setting for Digital/Downloadable Products within WooCommerce. This guide will walk you through the settings available and how to create a downloadable product: https://docs.woocommerce.com/document/digital-downloadable-product-handling/
Yes, you can edit your shop’s inventory options here: WooCommerce > Settings > Products > Inventory. Then, click “Enable stock management”.
When you are adding a product you can then manage the inventory available for that item by following this guide here:

Yes. If you want to build your course through WooCommerce, we’d recommend the WooCommerce Paid Courses extension. From there you can create courses and sell them: https://woocommerce.com/products/woocommerce-paid-courses/
When adding a product from WooCommerce > Products > Add Product you can select ‘External/Affiliate’ from the product type dropdown. Here is a guide on how to accomplish that:
