Hi there,
by default, the plugin only works for oEmbeds, that means for embeds that WordPress knows and thus are already pre-processed by WordPress (one exception: Google Maps).
If you want to add custom embeds, you can manage them in you WordPress admin under Settings > Embed Privacy > Manage embeds.

Can you share your regex and your included content you’ve tried with?
Do regular oEmbeds work (by just pasting e.g. a link to a YouTube video in the editor)?

As regex for the YouTube embed, use this one:
/youtube\.com\/embed\//
The Twitter content is no embed, it’s just a link. So there’s no reason Embed Privacy should do anything with it.
