Hi Johannes – Can you share a screenshot (can be partial) that demonstrates the strange characters? This sounds like a bug.
The “not designed nicely” bit suggests that somehow your users are getting plaintext notifications, or in any case are not properly receiving the HTML-formatted digests. A screenshot may help me to understand this better.
General customization of the digest emails is difficult, so it would be good to eliminate the simpler sources of your issues before giving you advice on true customization.
Hi, here is a text… the email html design is fine… just the text looks too busy with full url links, etc.
Changing from URL links to text links is the main issue. Just impossible to use right now … looks messy and not professional. Thanks for a help an fix. And we have a programmer that might be able to fix it if you tell us where the email template code is. Johannes

The link conversion is meant to help with email clients that can’t/won’t parse HTML links properly. If you’d like to disable it, you should be able to do so as follows:
remove_filter( 'ass_clean_content', 'ass_convert_links', 6 );

It sounds like your issue is you are using a 3rd-party email plugin.
3rd-party email plugins force the use of plain-text. When this happens, for the plain-text format, we convert HTML links over to legible links.
You can try the following code snippet to disable plain-text conversion for usage with your 3rd-party email plugin:
