With their bold colours and juicy flavours, strawberries just brim with joy and health. Harbingers of spring, they are an excellent source of vitamin C, a source of fibre, and low in calories, making them to the go-to treat when out for walks, or sitting in the sunshine. So – go ahead, grab a bowl of strawberries, and enjoy the flavour of health, goodness and yum! Strawberry BLT Lettuce Roll-Ups A low carb lettuce wrapped BLT that uses fresh strawberries instead of tomatoes for a similar taste with a fun new twist! Recipe by Kendra of The Paleo Paparazzi. Makes 2 servings. 1 head of lettuce (iceberg/romaine/butter) 6 slices deli turkey/chicken breast 8 slices of bacon cooked 2 Tbsp. (30 mL) mayo 12 strawberries, sliced On a large piece of parchment paper layer 5-6 big lettuce leaves in middle, as if they are one large single piece of lettuce. To centre, add 3 slices of lunchmeat, 1 Tbsp. (15 mL) mayonnaise, 4 bacon slices, and half of sliced strawberries. Grab top and bottom of large lettuce layer, like you’re folding them in together, then start using parchment paper to help you roll it up. Use parchment paper to snugly wrap & roll like a jelly roll, tucking and tightening as you go. Tuck in ends like you would a burrito or twist off ends very securely. Repeat steps above for second lettuce roll-up. Use a knife to cut roll-ups in half. Roll down parchment paper as you eat. Strawberry Mojito Ice Pops The ultimate summer treat: a cocktail and an ice pop all in one! Perfect to enjoy poolside, or backyard barbecue. Hold the rum for a mocktail version. Makes 8 pops. 1/2 cup (125 mL) strawberries chopped 1 cup (250 mL) water 1/4 cup (60 mL) lime juice 3 Tbsp. (45 mL) simple syrup (equal parts sugar and water, boiled into a syrup) 1/3 cup (75 mL) rum 1/2 cup (125 mL) strawberries sliced 2 Tbsp. (30 mL) fresh mint leaves, chopped Puree chopped strawberries, water, and lime juice in a blender to create a strawberry limeade. Mix strawberry limeade, simple syrup, and rum in a pitcher and stir well. Add sliced strawberries and mint leaves into each well of a popsicle mold. Pour mojito mixture into each well, leaving about 1/4-inch of room at top so that they do not overflow. Freeze for about 45 minutes. Remove from freezer, insert wood sticks, and push mint and strawberries down into wells. Cover and put back into freezer. Freeze for at least 4 hours until ice pops are completely frozen. Remove from freezer and run underside of tray under warm water for 30 seconds. Remove ice pops from molds and enjoy. Strawberry Arroz Con Leche Rice 1 cup (250 mL) whole milk 1 cup (250 mL) whipping cream 1/2 cup (125 mL) condensed milk 1 tsp. (5 mL) vanilla extract 1 cup (250 mL) long grain rice 2 cups (500 mL) water 1 cinnamon stick Strawberry Sauce 3 cups (750 mL) chopped strawberries 1/2 cup (125 mL) 100% orange juice 1/4 cup (60 mL) sugar 4 strawberries cut in half for garnish 4 mint leaves Rice Pudding: In a small bowl, stir together milk, whipping cream, condensed milk and vanilla extract; set aside. Under running water, rinse rice until water stops running cloudy. Add rinsed rice to a pot with two cups of water and cinnamon. Cook over medium heat. When it reaches a boil, reduce heat to low and cook, covered, for 15 minutes. Stir milk mixture into rice and cook for an additional 5 minutes. Let cool completely. Strawberry Sauce: In blender, puree 1-1/2 cups (375 mL) of strawberries with orange juice and sugar; stir in remaining chopped strawberries. In individual cups, spoon a layer of rice pudding followed by a layer of strawberry sauce; repeat one more time and garnish with strawberry halves and mint leaves.
